Crispy Cauliflower and Chickpea Bites

This recipe is so simple. Use fresh cauliflower and chickpeas, onion, herbs and spices to make delicious savoury nuggets. One head of cauliflower will make around 60 bites which can be fried, oven-baked, but for the best result, Air fried.

Ingredients
  

  • 1 head of cauliflower break into florets
  • 1 can chickpeas drained and rinsed
  • 1/2 medium onion finely chopped
  • handful fresh parsley
  • 1/4 cup nutritional yeast
  • 1 cup breadcrumbs
  • 1/2 cup oat flour
  • 2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp sage
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne powder optional
  • 1/4 tsp white pepper
  • 1/2 tsp Celtic sea salt

Instructions
 

  • Break the cauliflower into florets then add all of it to the food processor. Blend until it becomes cauliflower rice. Line a baking tray with paper towels and spoon the cauliflower out spreading it over the tray then cover with more paper towels. Lightly press the cauliflower to remove some of the moisture. Allow it to sit while you prepare the rest of the ingredients.
  • Add the rest of the ingredients to the food processor and blend until well combined. You may have to stop a couple of times and scrape down the sides.
  • Place the blended ingredients into a large bowl. Add the cauliflower rice and mix well until all ingredients are combined.
  • Using your hands, shape small amounts of the mixture into 2 cm balls (or any shape you like) and place them on a tray lined with baking paper. Refrigerate for 1 hour.
  • Cook batches in an air fryer at 200 degrees for 12 minutes, turning half way through.
  • Serve with your favourite dipping sauce and a squeeze of lemon.
