Neapolitan Chia Pudding
Indulge yourself, guilt free, in this mouth-watering combination of strawberry, vanilla and chocolate.
Chia pudding is not only a delicious dessert, partnered with fresh fruit and and the antioxidant punch from cacao, it's also a power packed superfood breakfast. Chia seeds are not just a great source of Omega 3, but are also high in fibre, calcium, magnesium, manganese and zinc.

  • Blender or stick blender


  • Strawberry chia mix
  • 1 cup Oat milk or any plant milk
  • 3 1/2 tbsp black chia seeds
  • 1 cup fresh strawberries
  • 1 tsp vanilla essence this may vary if you are using a concentrate
  • 1/2 tsp beetroot powder
  • Chocolate chia mix
  • 1 cup oat milk
  • 3 1/2 tbsp black chia seeds
  • 1 tsp vanilla essence
  • 1 medium ripe banana
  • 2 tbsp cacao
  • Vanilla Yoghurt Mix
  • 6 tbsp plain coconut yoghurt
  • 4 tsp vanilla essence


  • Place all ingredients for the strawberry chia mix into a blender. Blend on high until smooth then pour into a lidded container and refrigerate for at least an hour or overnight.
  • Repeat step 1 for the chocolate chia mix.
  • Mix yoghurt and vanilla until well combined, cover and refrigerate.
  • To serve, spoon chocolate chia mix into a mason jar a little over a third full.
  • Sprinkle some finely chopped strawberries then spoon a couple of tablespoons of vanilla yoghurt.
  • Then gently spoon strawberry chia mix to just under the top. place a good size dollop of vanilla yoghurt on top and dress it with some chopped strawberries and sunflower kernels.


If you would like it to be a little sweeter, add some maple syrup.
