Perfect Pasta Salad

Pasta salad is great to have as a side dish, on a bread roll or wrap or even on it's own as a refreshing alternative for lunch. By adding a great variety of fresh vegetables, you can ensure that this is a satisfying meal that ticks all the boxes.
Along with high fibre vegetable pasta spirals and my homemade herb mayo recipe you can be assured this is nothing like supermarket pasta salad.

  • Blender or stick blender


  • 2 cups dry vege pasta cook as per packet instructions and cool. Do not overcook
  • 1 med red capsicum chopped
  • 1 Lebanese cucumber diced
  • 60 g baby English spinach roughly chopped
  • 1/2 bunch parsley chopped
  • 2 med avocadoes diced into 1 cm cubes
  • 1 cob corn cut kernels off the cob
  • 1 red onion finely chopped
  • 1 med carrot grated
  • 1 punnet baby roma or cherry tomatoes quartered
  • 2 stalks celery chopped
  • 1 complete serve Herb Mayo as per Love Thy Temple Herb Mayo recipe (link below)


  • Cook, drain, rinse and cool pasta as per directions
  • place all ingredients in a large salad bowl
  • Toss all ingredients gently until well combined then serve
