Ingredients
- 200g corn chips
- 200g baby Roma tomatoes quartered
- 1/2 iceberg lettuce chopped
- 1 cob corn Kernels sliced from the cob
- 1 Lebanese cucumber diced
- 1/2 red capsicum finely chopped
- 1/2 yellow capsicum finely chopped
- 1/2 red onion finely chopped
- 1 batch LTT's Mexican bean salsa find in https://lovethytemple.com.au/recipes/
- 1 batch LTT's guacamole find in https://lovethytemple.com.au/recipes/
Instructions
- Evenly distribute corn chips on 4 plates.
- Spoon an even amount of warm bean salsa on top of the corn chip base.
- Sprinkle vegetables on top in evenly distributed layers finishing with a generous amount of lettuce.
- Top with a dollop of guacamole and garnish with chopped coriander.
Notes
This is a dish that you can really customise to your own taste. Sprinkle fresh chopped chillies, thin slices of mango or whatever you like.
