Neapolitan Chia PuddingIndulge yourself, guilt free, in this mouth-watering combination of strawberry, vanilla and chocolate.Chia pudding is not only a delicious dessert, partnered with fresh fruit and and the antioxidant punch from cacao, it's also a power packed superfood breakfast. Chia seeds are not just a great source of Omega 3, but are also high in fibre, calcium, magnesium, manganese and zinc.

1/2tspbeetroot powder
Chocolate chia mix
1cupoat milk
3 1/2tbspblack chia seeds
1tspvanilla essence
1mediumripe banana
2tbspcacao
Vanilla Yoghurt Mix
6tbspplain coconut yoghurt
4tspvanilla essence
Instructions
Place all ingredients for the strawberry chia mix into a blender. Blend on high until smooth then pour into a lidded container and refrigerate for at least an hour or overnight.
Repeat step 1 for the chocolate chia mix.
Mix yoghurt and vanilla until well combined, cover and refrigerate.
To serve, spoon chocolate chia mix into a mason jar a little over a third full.
Sprinkle some finely chopped strawberries then spoon a couple of tablespoons of vanilla yoghurt.
Then gently spoon strawberry chia mix to just under the top. place a good size dollop of vanilla yoghurt on top and dress it with some chopped strawberries and sunflower kernels.
Notes
If you would like it to be a little sweeter, add some maple syrup.
