Mexican Bean Salad

This super easy, super fresh tasting salad is easy to make and easy to enjoy a variety of ways!

Ingredients
  

  • 1 can four bean mix
  • 1 can black beans
  • 1 can corn kernels
  • 1 medium red onion
  • 1 medium red capsicum
  • 1 avocado
  • 1/2 cup coriander
Dressing
  • 1 tbsp olive oil
  • 3 teaspoons cumin
  • 1 teaspoon paprika
  • chili flakes to taste
  • salt and pepper to taste

Method
 

  1. Rinse and drain the cans of beans and corn and add to a large bowl.
  2. Chop the red onion and capsicum into small cube like pieces and add to bowl.
  3. Add the olive oil and spices and mix well.
  4. Finely chop the coriander, add it to the bowl and mix in, saving some for garnish at the end.
  5. If serving and eating right away, slice and add the avocado or add as you need in the event the salad is to be eaten across meals to ensure freshness and colour.
  6. Dish can be eaten as a salad on its own, or add corn chips, plain coconut yoghurt or other like additions to help mix it up to your taste!
