Guacamole
When ripe avocados come together with lemon juice, herbs and spices it's a thing of beauty. This guac recipe is great on it's own as a dip, on burritos, nachos and pretty much anything Mexican. It's also perfect on a baked potato or even on toast.

- 3 ripe avocados
- 1 lemon juiced
- 1/4 bunch coriander chopped
- 1 fresh chilli chopped optional
- 1/2 tsp celtic sea salt optional
- 1/2 tsp ground black pepper
- 1/2 red onion finely chopped
- 1/2 clove Garlic minced
Simply place all ingredients into a bowl and mash with a fork, or for a smoother blend, try using a stick blender.
Serve with your favourite dish or your favourite chips to dip.
