Perfect Plant Based Nachos

A deliciously fresh twist on a Mexican favourite. A mountain of goodness starting with corn chips then a warm bean salsa, fresh tomatoes and vegetables, and topped with a generous dollop of guacamole. This is a healthy dish that the whole family will enjoy.

Ingredients
  

  • 200g corn chips
  • 200g baby Roma tomatoes quartered
  • 1/2 iceberg lettuce chopped
  • 1 cob corn Kernels sliced from the cob
  • 1 Lebanese cucumber diced
  • 1/2 red capsicum finely chopped
  • 1/2 yellow capsicum finely chopped
  • 1/2 red onion finely chopped

Method
 

  1. Evenly distribute corn chips on 4 plates.
  2. Spoon an even amount of warm bean salsa on top of the corn chip base.
  3. Sprinkle vegetables on top in evenly distributed layers finishing with a generous amount of lettuce.
  4. Top with a dollop of guacamole and garnish with chopped coriander.

Notes

This is a dish that you can really customise to your own taste. Sprinkle fresh chopped chillies, thin slices of mango or whatever you like.
