Quick and Simple Fried Rice

Fried Rice
Servings: 4 people
Course: Dinner

Ingredients
  

  • 2 cups rice I prefer brown but we've used white here.
  • 3 cups water
  • 1 vegetable stock cube I use Massels
  • 2 tablespoons coconut oil
  • 4 serves of chosen protein I've used Birdseye plant-based chicken pieces
  • 1 brown onion, diced
  • 1 teaspoon garlic, minced
  • 1 medium carrot, julienned
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 capsicum, thinly sliced
  • 1/2 cup corn kernels I tend to use frozen corn for ease
  • 3 tablespoons soy sauce
  • 2 teaspoons dark soy sauce

Method
 

  1. Cook the rice using your preferred method. I use the absorption method adding the rice and water with the vegetable stock cube just for extra flavour.
  2. Add 1 tablespoon of the coconut oil to a large frying/wok pan and add your chosen protein. I've used Birdseye plant-based chicken pieces here. Cook through and then set aside to add to the pan again later.
  3. In the same large fry pan, add the second tablespoon of coconut oil and the diced onion. Fry off the onion until translucent and then add the minced garlic.
  4. Add the vegetables in order of most to least cooking time, e.g. cauliflower, broccoli, carrots, capsicum and then corn towards the end.
  5. Add in the desired amount of rice and soy sauces to taste. I have added what I use, but I LOVE soy sauce.
  6. Return the protein to the pan ow also and stir through ensuring all ingredients are covered with sauce and cooked through.
  7. Serve!
