Vegan Herb Mayonnaise

Finally there is a mayonnaise recipe that is quick and easy to make and is free from all the nasties found in the supermarket one's.
The perfect additive to pasta salads, a baked potato, wraps or even as a dipping sauce.

Ingredients
  

  • 300 g silken tofu drained
  • 1 tsp mustard powder
  • 1/2 tsp Celtic sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 tbsp white wine vinegar
  • 1/2 bunch dill
  • 1/4 cup parsley

Equipment

  • Blender or stick blender

Method
 

  1. Place all ingredients in a bowl and blend until smooth
  2. Serve immediately or cover and refrigerate for up to 3 days

Notes

This recipe is the perfect mayo for my pasta and potato salad recipes but also goes great on burgers and sandwiches.
